El nombre viene de una expresión del abuelo de Carlos y Juanjo, siempre comentaba que las uvas que entraban a la bodega, provenientes de este paraje, eran “Muy serviles”. Esta área, situada a una altitud considerable, presenta suelos calcáreos profundos que resultan en vinos con bajos niveles de pH y buena madurez.
